The
things that make me smile.
Like waking up in the morning and hearing the bird’s
sing, a wonderful chirping chorus of out of key singing. The inflections obvious in the different tones abundant in the early morning sunshine.
Listening
to the sound of my children laughing even as they have become adults makes me
smile every time. Looking at photos old and new.
Enjoying
that first sip of coffee in the morning, even better having it with a friend.
Looking forward to a hot shower and enjoying my favorite scents.
Knowing
how lucky I am to have sisters and their families close by. Wishing that those
who have passed away could see how we had all turned out. My grandparents would have laughed at their eldest granddaughter becoming an
author when she couldn't spell to save her life (thank goodness for spell
checker)
Making a good cake and using the recipe my grandma gave me.
So,
so much to be thankful for!
Grandma's Victoria Sandwich
·
8 ozs butter
·
8 ozs sugar
·
7 ozs self-raising flour
·
1 tablespoon custard powder
·
1 tablespoon cornflower
·
¼ teaspoon salt
·
1 teaspoon baking powder
·
4 eggs
·
Jam
·
Caster sugar
·
Fresh cream
·
Fresh strawberries and raspberries.
Cream the butter and sugar together
until white and fluffy.
Gradually add the eggs alternating
with the flour mixture, beating thoroughly.
Fold in the rest of the dry
ingredients. Be gentle.
Put into two greased 6 inch sandwich
tins.
Bake at 375F/190C, Gas Mark 5 for 20
– 30 minutes.
Put together with jam , fresh cream and
fruit when cool.
Dredge with sugar and serve.
Delicious with a good strong cup of tea...the way Grandma used to make it!
